We’ve been a gluten free family for several years due to some health issues that reversed themselves when we stopped eating gluten. For me, my anxiety always gets worse when I eat gluten even though I’m technically not intolerant to it. I’ve seen it happen very clearly. Ronin has experienced similar issues so we just decided it was best to avoid it. There are some amazing options out there, particularly a lot of naturally gluten free foods, but one that we miss being Italian is pasta. My poor dad thinks wheat free pasta isn’t real pasta but I tricked him one time a few years ago and he didn’t even notice. haha.
We use quinoa pasta for the taste and it seems to stand up better than rice pasta, which is what you can typically find in gluten free sections. So I definitely recommend looking for a pasta that has some quinoa in it. I’ve included a link below to the brand we always use.
With the summer in full swing there are tons of BBQs and parties happening. How often do we need to bring a tray of food with us for a fun event this time of year?! Gluten Free BLTG Pasta Salad
Ingredients
12oz package center cut bacon, crumbled
10 oz package cherry tomatoes, cut in half
2 cups finely chopped romaine lettuce
2 – 8 oz packages gluten free pasta
Balsamic vinaigrette dressing 12 oz
4 oz herb goat cheese
Basil to garnish
Large bowl serves 8-10
Instructions
Boil gluten free pasta according to package instructions, and be sure not to overcook. Gluten free pasta can crumble is cooked too long. Cook bacon until very crispy, then crumble. Drain pasta and then add romaine lettuce, cherry tomatoes, and crumbled bacon and goat cheese. Top with balsamic vinaigrette dressing and stir. The goat cheese kind of melts and gives the pasta salad a lovely creamy cheese sauce. Serve and enjoy!
