I typically make it just as you would oatmeal with milk, but it gets a little boring eating the same old same old breakfast every morning. So today I’ve created an oat bran muffin recipe that is Dukan friendly and evokes those Fall-inspired pumpkin spices that I just love oh so much. I am obsessed with pumpkin anything and of course Halloween so I also did a little simple Halloween decorating to feel festive. Yay for Fall!
The result of this recipe is 5 muffins so you can mix up your week’s oat bran intake with this delicious little muffin. Enjoy with a nice coffee or tea and even some eggs (high protein diet y’all!) for a delicious breakfast. The oat bran is the only food item that you have to measure on this diet, as you are allowed as much low fat protein as you would like, which I love. I haven’t been feeling hungry at all and have been doing so great losing weight.
Pumpkin Spice Oat Bran Muffins with Cream Cheese
What You’ll Need:
1 tsp baking powder
1 tsp pumpkin pie spice
2 eggs
6 tbsps oat bran
3 tbsp non-sugar sweetener
3 tbsp cream cheese
cupcake liners (Halloween inspired like these)
Instructions:
This recipe makes 5 muffins and provide just over 1 tbsp of oat bran for your Dukan diet. Preheat oven to 350 degrees. Mix eggs and sugar substitute until smooth. Then add in additional ingredient and mix until smooth. Spray cupcake liners or muffin pan with non-stick cooking spray. Fill cups 3/4 full. Bake on 350 for approximately 18 minutes until done. Sprinkle with powered non-sugar sweetener, decorate and enjoy!
